Est. atop Monte Sano · 1,650 ft

Peak meat.
No summit for second best.

Hand-tied sausages, dry-aged steaks and trail-ready jerky, butchered at the top of Monte Sano and sent down to Huntsville the hard way. It’s all downhill from here — in the good way.

The Range

Our ascent

We started at the bottom. Now we’re here.

Monte Sano means “mountain of health,” and people have been coming up here to feel better since the 1800s. Makos Meats began with one grinder and a strong opinion that sausage tastes better with a view of Huntsville. We hauled the smoker up switchback by switchback, and somewhere around the treeline we stopped coming back down.

Everything we sell is cut, cured, smoked or tied by hand at basecamp. We don’t take shortcuts. There aren’t any — we checked. It’s a mountain.

Trail questions

Frequently asked, rarely answered well

How do you ship meat from the top of a mountain?

Gravity, mostly. Then a cooler, dry ice and a carrier who has signed several waivers.

Is it fresh?

It’s cold up here. Everything is fresh. Some of it is frozen. We’re working on telling the difference.

Do you have vegetarian options?

We have a rock. It is not for sale, but you can look at it.

What does the elevation number mean?

How far up Monte Sano it lives. Downtown Huntsville is about 600 ft, the top of the mountain about 1,650. Higher is peakier. Nothing beats the summit.

Can I pick up in person?

Absolutely. Drive up Monte Sano Boulevard and follow the smell of hickory. Crampons optional.
